Quick Chicken Curry




Quick Chicken Curry

2 TBSP butter
1 tsp curry powder
1 small onion, chopped (1/4 cup)
2 cups cut-up cooked chicken or turkey
1 unpeeled small red apple, coarsely shopped
1 can (10 3/4 ounces) condensed cream of chicken soup
1 soup can of milk
Hot cooked rice

Melt butter in 3-quart saucepan over medium heat. Cook curry powder and onion in butter about 5 minutes, stirring occasionally, until onion is tender. Stir in remaining ingredients except rice. Cook, stirring occasionally, until hot. Serve over rice.

Zesty Pork Tenderloin

Zesty Pork Tenderloin




1/4 cup ketchup
1 TBSP sugar
1 TBSP dry white wine or water
1 TBSP hoisin sauce
1 clove garlic, finely chopped
2 pork tenderloins (about 3/4 pound each)

Mix all ingredients except pork in shallow glass or plastic dish. Add pork; turn to coat with marinade. Cover and refrigerate at least 1 hour but no longer than 24 hours, turning pork occasionally. Heat oven to 425 degrees. Place pork on rack in shallow roasting pan. Insert meat thermometer horizontally so tip in thickest part of pork. Roast uncovered 27 to 29 minutes or until thermometer reads 160 degrees or pork is slightly pink in center.

Parmesan Breaded Pork Chops

Parmesan cheese highlights the flavors in these tasty pork chops. Try serving these with pasta, mashed potatoes, couscous or rice.

Parmesan Breaded Pork Chops

1/3 cup Italian-style dry bread crumbs
2 TBSP grated Parmesan Cheese
4 pork boneless butterfly loin chops, 1/2-inch thick (about 1 1/4 pounds)
1 egg, beaten
1 can (14 1/2 ounces) chunky tomatoes with olive oil, garlic and spices, undrained
1 can (8 ounces) tomato sauce
1 small green bell pepper, chopped (about 1/2 cup)

Mix bread crumbs and cheese. Dip pork in egg, then coat with crumb mixture. Spray 12-inch nonstick skillet with nonstick cooking spray; heat over medium heat. Cook pork in skillet about 5 minutes, turning once, until brown. Stir in remaining ingredients. Heat to boiling; reduce heat to low. Cover and simmer 10 to 12 minutes' stirring occasionally, until pork is slightly pink in center.

Quick Breading When Cooking Chicken or Fish

Breading chicken or fish before cooking



Try these quick coatings if your cooking chicken or fish in the near future. Dip chicken or fish in melted butter, salad dressing, mayonnaise or mustard; then coat with desired crumbs and bake, grill or cook in a skillet.

* Bread crumbs mixed with dry salad dressing mix
* Bread crumbs mixed with Parmesan cheese
* Bread crumbs mixed with dry seasoning mixes
* Cornmeal mixed with chili powder, Cajun or Creole seasoning
* Crushed cereal
* Crushed corn chips
* Crushed crackers
* Crushed potato chips
* Crushed tortilla chips
* Seasoned bread crumbs

Parmesan-Dijon Chicken

Cooking Parmesan-Dijon chicken


Parmesan-Dijon Chicken

3/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup (1/2 stick) butter, margarine or spread, melted
2 TBSP Dijon mustard
6 skinless boneless chicken breat halves ( about 1 1/2 pounds)

Heat oven to 375 degrees. Mix bread crumbs and cheese in large plastic bag. Combine butter and mustard. Dip chicken in butter mixture. Shake chicken in bag to coat with crumb mixture. Bake uncovered 20 to 30 minutes, turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut.

Cooking Spicy Mexicali Drumsticks

Spicy Mexicali Drumsticks

1/3 cup buttermilk*
1/4 tsp red pepper sauce
2/3 cup cornmeal
2 tsp taco seasoning mix
8 chicken drumsticks ( about 1 3/4 pounds)
2 tsp vegetable oil
Salsa, if desired

Heat oven to 400 degrees. Grease rectangular pan, 13 X 9 X 2 inches. Mix buttermilk and pepper sauce in medium bowl. Mix cornmeal and seasoning mix in large plastic bag. Dip chicken into buttermilk mixture, then shake in bag to coat with cornmeal mixture. Place in pan. Drizzle with oil. Bake uncovered 40 to 45 minutes, turning once, until juice of chicken is no longer pink when center of thickest pieces are cut. Serve with salsa.

*One-third cup milk mixed with 1 tsp lemon juice can be substituted fro the buttermilk. Let stand 5 minutes.

Sparkling Raspberry Tea

I love making this tea on hot summer days weather I'm having family or friends over or if I'm spending the day by myself. Its easy to make and its very delicious and refreshing. I hope you like it as much as I do.

Sparkling Raspberry Tea

2 cups *cold brewed tea
2 cups chilled raspberry or cranberry-raspberry juice
2 cups chilled sparkling water
Raspberries, lime slices or lemon slices, if desired
Fresh mint leaves, if desired

Mix tea, juices and sparkling water. Serve over ice. Garnish with raspberry and mint.

* Use instant tea dissolved in cold water for the cold brewed tea for this refreshing drink.

Easy Grilled Garlic Drumsticks

Grilled Garlic Drumsticks

2 TBSP olive oil or vegetable oil
1/4 tsp salt
1/8 tsp ground red pepper ( cayenne)
1 clove garlic, finely chopped
4 chicken drumsticks ( about 1 1/2 pounds)
chopped cilantro, if desired

Heat coals or gas grill. Mix oil, salt, red pepper and garlic; brush on chicken. Cover and grill chicken 4 to 6 inches from medium heat 30 to 40 minutes, turning 2 or 3 times, until juice is no longer pink when centers or thickest pieces are cut. Sprinkle with cilantro.

*This recipe can easily be doubled.

Grilled Honey-Mustard Pork Chops

The sweet honey glaze on these chops brown easily, so watch the chops carefully and make sure the coals are not too hot.

Grilled Honey-Mustard Pork Chops

1/4 cup honey
2 TBSP Dijon mustard
1 TBSP orange juice
1 tsp cider vinegar
4 pork butterfly loin chops, 1 in. thick (about 1 pound)

Heat coals or gas grill. Mix all ingredients except pork. Cover and grill pork 4 to 6 inches from medium heat 14 to 16 minutes, brushing occasionally with honey mixture and turning once, until slightly pink in center.

Breaded Ranch Chicken

This recipe is in my top ten go-to meals. It's a perfect mix of cornflakes, Parmesan cheese and ranch dressing. Looks great, taste great, and my family loves it.

Breaded Ranch Chicken

3/4 cup crushed cornflakes
3/4 cup grated Parmesan cheese
1 envelope ranch salad dressing mix
8 boneless skinless chicken breast halves (2 pounds)
1/2 cup butter or margarine, melted

In a shallow bowl, combine the cornflakes, Parmesan cheese and salad dressing mix. Dip chicken in butter, then roll in cornflake mixture to coat. Place in a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees for 45 minutes or until chicken juices run clear.

Chex Mix Puppy Chow

This recipe is on the back of the Chex Cereal box and its so delicious and easy to make. It's perfect to take camping, on a road trip, or to make for the holidays.

Chex Mix Puppy Chow

9 cups Chex cereal (any variety-i use the Corn)
1 bag (6 oz) semisweet chocolate chips (1 cup)
1/2 cup peanut butter
1/4 cup butter or margarine
1 tsp vanilla
1 1/2 cups powdered sugar

Measure cereal into a large bowl; set aside. Microwave chocolate chips, peanut butter and butter in 1-quart microwavable bowl uncovered on High 1 minute; stir. Microwave 30 seconds longer until mixture can be stirred smooth. Stir in vanilla. Pour chocolate mixture over cereal in bowl, stirring until evenly coated. Pour into 2-gallon plastic food-storage bag; add powdered sugar. Seal bag; shake until well coated. Spread on wax paper to cool. Store in air tight container in refrigerator.

Dirt Cake

This cake is really fun to make for smaller children. I remember my step mom made this for me for my 8th birthday party. Its a great alternative to just an everyday birthday cake.

Dirt Cake

1 8 oz package instant vanilla pudding
3 cups milk
1 8 oz package cream cheese, softened
1 16 oz carton Cool whip
1 16 oz package Oreo cookies
1 package gummy worm candy
1 new clean clay flowerpot (optional)
1 new clean trowel (optional)

Crumble Oreos, a few at a time, in a blender or food processor. Blend pudding and milk. Blend cream cheese and cool whip; add to pudding mixture and mix well. Put a layer of crumbled Oreas into flowerpot; add some pudding and candy worms and continue layering. Top layer of "dirt" is made of Oreo cookies with worms wriggling out. Place flowers on top.
Serves about 15 to 20.

Feta Bruschetta

These savory warm appetizers of feta cheese, tomatoes, basil, and garlic are terrific for holiday parties or most any gatherings.

Feta Bruschetta

1/4 cup butter or margarine, melted
1/4 cup olive or vegetable oil
10 slices French bread (1 inch thick)
1 package (4 oz) crumbled feta cheese
2 to 3 garlic cloves, minced
1TBSP minced fresh basil or 1 tsp dried basil
1 large tomato, seeded and chopped

In a bowl, combine the butter and oil; brush onto both sides of bread. Place on a baking sheet. Bake at 350 degrees for 8-10 minutes or until lightly browned on top. Combine the feta cheese, garlic, and basil; sprinkle over toast. Top with tomato. Bake 8-10 minutes longer or until heated through. Serve warm and enjoy!

Cooking A BLT Pizza

I use a prebaked crust and toppings from the much-loved BLT sandwich to create this fun variation. This is my family's favorite, and fun for the kids to help make.

BLT Pizza

1 prebaked Italian bread shell crust (16 oz) I use Boboli pizza crust
1/2 cup mayonnaise*
2 tsp dried basil
1/2 tsp garlic powder
1/8 tsp onion powder
12 bacon strips, cooked and crumbled
3/4 cup shredded cheddar cheese
3/4 cup shredded mozzarella cheese
1-1/2 cups shredded lettuce
2 medium tomatoes, thinly sliced

Place the crust on an ungreased 12-in. pizza pan. In a bowl, combine the mayonnaise, basil, garlic powder, onion powder; spread over crust. Set aside 1/4 cup bacon. Sprinkle cheeses and remaining bacon over crust. Bake at 425 degrees for 8-12 minutes or until the cheese is melted. Top with lettuce, tomatoes and reserved bacon. Cut into wedges. Serve immediately.

*Reduced fat or fat free mayonnaise shouldn't be used in place of regular mayonnaise

How To Make Crunchy Onion Chicken

Hey guys, it's me Sarah and I have an easy chicken recipe. It's something I like to make on Sunday nights when I don't have a lot of time. I hope you enjoy it as much as my family does.

Crunchy Onions Chicken
1 1/3 cups French's French Fried Onions
1 lb. boneless skinless chicken breast halves
1 egg, beaten


Crush French Fried Onions in a plastic bag.
Dip chicken into egg; then coat in onions crumbs.
Bake 20 minutes at 400 degrees until cooked through.


Prep time is about 5 minutes and cook time is about 20 minutes, depending on thickness of chicken.
